- 为了节约灌溉用水且提高酿酒葡萄果实品质,以酿酒葡萄“赤霞珠”为试材,通过调亏灌溉(regulated deficit irrigation,RDI)设定葡萄的灌水量分别为传统灌溉量的60%(RDI-1)、70%(RDI-2)、80%(RDI-3)和100%(conventional irrigation,CI),研究了调亏灌溉对“赤霞珠”葡萄及葡萄酒基本理化指标和花色苷组成及含量的影响,以期为“赤霞珠”葡萄水分的精确管理提供一定的参考。结果表明:与对照CI相比,调亏灌溉显著增加了葡萄果皮乙酰化及香豆酰化花色苷的比例,降低了非酰化花色苷的比例。RDI-1处理可显著增加果皮和酒中二甲花翠素-3-O-葡萄糖苷和二甲花翠素-3-O-(6-O-乙酰)-葡萄糖苷的含量。此外,不同RDI处理对葡萄酒中花色苷组成的比例影响与果皮一致。主成分分析结果表明,该试验条件下RDI-1处理即灌水量为传统灌溉量的60%是最佳处理。
- Abstract:
- In order to save water application and improve grape berry quality,the effect of regulated deficit irrigation (RDI) on the physicochemical,the composition and content of anthocyanin in ‘Cabernet Sauvignon’ berries and wines were investigated in 2016 in the Lilan vineyard,which might provide a certain reference for the precision water management technique of ‘Cabernet Sauvignon’ grape.The irrigation amount was treated with 60% (RDI-1),70% (RDI-2),80% (RDI-3),100% (conventional irrigation,CI),respectively.The results showed that compared with CI,RDI regimes increased the proportion of acetylated anthocyanin and coumaric acylatedanthocyanin with the reduction of non-acylated anthocyanin in grape skin.RDI-1 treatment significantly increased the content of malvidin-3-O-glucoside and malvidin-3-O-(6-O-acetyl) glucoside in both grape skin and wine.Moreover,the similar changes of the anthocyanin composition in skins was also found in wines.The comprehensive evaluation showed that both grape berries and wines possessed the highest score under 60% conventional irrigation supply.
