- 以壳聚糖、淀粉、苹果多酚为原料,制成壳聚糖/淀粉/苹果多酚复合膜涂剂,将新鲜双孢蘑菇分4组:4 ℃冷藏对照组;4 ℃冷藏+复合膜处理组;8 ℃冷藏对照组;8 ℃冷藏+复合膜处理组,处理组以复合膜涂剂对双孢蘑菇进行涂膜保鲜,对照组不对双孢蘑菇进行涂膜处理,研究了复合膜对双孢蘑菇贮藏期(0、4、8、12、16、20 d)呼吸速率、乙烯释放量、硬度、褐变度、维生素C、生物酶活力等指标的影响,以期为复合膜涂剂对双孢蘑菇保鲜效果提供参考依据。结果表明:壳聚糖/淀粉/苹果多酚复合膜涂剂能显著降低双孢蘑菇贮藏期间的乙烯释放量、失重率、褐变度、呼吸强度、丙二醛(MDA)含量、多酚氧化酶(PPO)活性;抑制菇体硬度、维生素C、总酚、可溶性糖、可溶性蛋白质含量、超氧化物歧化酶(SOD)活性的下降。在4 ℃和8 ℃贮藏条件下,壳聚糖/淀粉/苹果多酚复合膜涂剂处理组的双孢蘑菇的新鲜度指标均比各自对照组好。综上结果表明,壳聚糖/淀粉/苹果多酚复合膜涂剂能较好的延缓双孢蘑菇贮藏期间品质的退化。
- Abstract:
- The chitosan/starch/apple polyphenol composite film was prepared with chitosan,starch and apple polyphenol as raw materials.The fresh Agaricus bisporus were divided into 4 groups,4 ℃ control group,4 ℃+ composite film treatment group, 8 ℃ control Group,8 ℃ + composite film treatment group.The Agaricus bisporus were coated with composite film in the treatment group,and the Agaricus bisporus were not coated in the control group.The effect of composite film on respiration rate,ethylene release,hardness,browning degree,vitamin C and enzyme activity of Agaricus bisporus during storage (0,4,8,12,16,20 days) were studied,in order to provide reference basis for the preservation effect of composite film coating on Agaricus bisporus.The results showed that chitosan/starch/apple polyphenol composite film could significantly reduce ethylene release,weight loss rate,browning degree,respiration rate,MDA content and PPO activity during storage of Agaricus bisporus.It could inhibit the decrease of hardness,vitamin C,total phenol,soluble sugar,soluble protein content and SOD activity.When stored at 4 ℃ and 8 ℃,the freshness index of Agaricus bisporus in chitosan/starch/apple polyphenol composite film treated groups was better than that of the control group.The results showed that chitosan/starch/apple polyphenol composite film could delay the quality degradation of Agaricus bisporus during storage.
