- 以20份口感明显不同的印度南瓜为材料,进行营养品质测定以及熟食品尝鉴定,分析感官品质(口感甜度、面度) 和重要营养品质(可溶性固形物、淀粉、可溶性糖、干物质含量) 的相关性,以期为优质南瓜新品种的选育提供实践依据。结果表明:可溶性固形物、干物质含量与甜度和面度达到极显著正相关,可溶性糖含量与甜度呈显著正相关,且可溶性固形物含量与干物质含量存在极显著正相关,与可溶性糖含量存在显著正相关,与淀粉存在正相关关系。可溶性固形物测定简单易行,可作为肉用南瓜品质评价的简易鉴定指标。
- Abstract:
- Twenty different tasting Cucurbita maxima varieties were taken as materials.The eating quality(sweetness and dry powdery) and nutritional quality (soluble solids content,starch content,soluble sugar content and dry matter content) of pumpkin were determined and the correlation between two characteristics were analyzed.The results showed that soluble solids content and dry matter content extremely significantly positively correlated with sweetness and dry powdery,and soluble sugar content showed significantly positive correlation with sweetness.Soluble solids content extremely showed significantly positive correlation with dry matter content,significantly positive correlation with soluble sugar content,and positively correlated with starch content.Furthermore,the method for soluble solids content determination was convenient.In consequence,soluble solids content was a good indicator of whether the breeding materials had good nutritional quality and eating quality.
