- 硒是人体必不可少的营养元素，缺硒会引发多种疾病。利用蔬菜把无机硒转化为有机硒，通过食用富硒蔬菜提高人体中硒的摄入量。该研究从硒与人体健康、蔬菜富硒方法及富硒蔬菜的特点等方面概述了富硒蔬菜研究的意义，同时对富硒蔬菜的开发利用现状进行了论述，最后提出了目前富硒蔬菜研究中存在的问题并进行了展望。以期为全国富硒农业产业的发展提供理论及实践指导。
- Abstract:
- Selenium is a necessary element in human body.Lacking of selenium will lead to various diseases.Vegetables can achieve the transformation of inorganic selenium to organic selenium and increase the content of selenium,which is the fundamental measurement to improve body′s health.The research significance of selenium-enriched vegetable was summarized including the relationship between selenium and human health,the methods of elenium enrichment by vegetables and the characteristics of selenium-enriched vegetable.Furthermore,the exploitation and application progress of selenium-enriched vegetable was discussed.Finally,the problems and prospect in the research of selenium-enriched vegetable were pointed out in this study.
