- 以矮丛越橘和半高丛越橘为试材,通过顶空固相微萃取技术和气相色谱-质谱联用技术(HS-SPME/GC-MS)分别检测了10个越橘品种的挥发性成分,以期为选育优良香气越橘品种提供参考依据。结果表明:共检测出五大类,29种挥发性成分,分别为醇类2种、酯类6种、烃类8种、醛类5种、酮类8种;其中酯类的含量最高,乙酸辛酯、3-甲基丁酸乙酯和戊酸乙酯的含量较高对以酯类为主要挥发性成分的越橘品种香气品质贡献较大。不同越橘类群的挥发性成分具有较大差异,矮丛越橘检出挥发性成分的含量和种类均高于半高丛越橘。矮丛越橘共检测出27种挥发性成分,半高丛越橘检出18种。不同越橘品种间也具有较大的差异,“伊妹儿”检出挥发性成分的种类和含量均最高,共检测出27种挥发性成分,总含量4 519.44 ng·g-1,“芬蒂”检出的最少,总含量628.03 ng·g-1。
- Abstract:
- The volatile components in 10 varieties fruits of half high-bush blueberry and low-bush blueberry were analyzed by static headspace and gas chromatography-mass spectrometry to provide reference for breeding fine aroma blueberry.The results showed,total 5 kinds volatile components were detected include 2 kind alcohols,6 kind esters,8 kind hydrocarbons,5 kind aldehydes,8 kind ketones.Among them,the content of esters was the higest,the content of acetic acid,octyl ester,Butanoic acid,3-methyl-,ethyl ester,Pentanoic acid,ethyl ester were higher.and the aroma quality of the blueberry varieties with esters as the main volatile component was more significant.The volatile components of different blueberry groups had significant difference.The low-bush blueberry detected a total of 27 kinds of volatile components,their contents and types were higher than those of halfhigh-bush blueberry.There were also significant differences among different blueberry cultivars.‘Emil’ was the highest,with 27 volatile components detected,with a total content of 4 519.44 ng·g-1,and ‘Fundy’ detected was the least,which total content was 628.03 ng·g-1.
