香菇液体发酵过程中生理指标的检测分析

- 以香菇66#菌株为试材,采用液体发酵方法,研究了菌丝球数量、pH值、还原糖含量、氨基氮含量、纤维素酶活性、漆酶活性、蛋白酶活性等对香菇菌丝生长主要生理指标的影响。结果表明:当香菇菌株在26℃、160 r/min摇床振荡培养至第8天时,菌丝球数量最多。此时,发酵液pH 6.5,还原糖和氨基氮含量分别为47.12 mg/100mL和11.87 mg/100mL,纤维素酶活性、漆酶活性和蛋白酶活性分别为1.25、0.023、0.18 U。
- Abstract:
- Taking Lentinula edodes 66# as test material,using the method of liquid fermentation,the main physiological indexes (mycelial pellet numbers,pH value,reducing sugar content,amino nitrogen content,cellulase activity,laccase activity,protease activity) affecting the mycelial growth of Lentinula edodes was studied.The results showed that mycelial pellet numbers of Lentinula edodes was the most under the conditions with 26℃,160 r/min in the rotary vibrator for 8 days.At this time,pH value of fermentation solution was 6.5,reducing sugar content was 47.12 mg/100mL,amino nitrogen content was 11.87 mg/100mL,cellulase activity was 1.25 U,laccase activity was 0.023 U,and protease activity was 0.18 U.
