- 以大球盖菇(Stropharia rugosoannulata)为试材,采用单因素试验和正交实验方法,研究了母种培养基的碳源、氮源及pH条件优化和不同基质配方对其出菇时间、产量及营养成分的影响,以期为大球盖菇工业化生产提供参考依据。结果表明:玉米粉、麦麸和豆粕分别作为碳源和氮源时,菌丝生长最为理想,而蛋白胨则显著抑制菌丝生长。通过单因素试验和正交实验,确定了最优的培养基组合为玉米粉3 g·L-1、麦麸3 g·L-1、豆粕2 g·L-1,且pH 6为菌丝生长的最适条件。不同基质配方对大球盖菇的出菇时间、产量及营养成分有显著影响,其中处理3的基质配方在缩短出菇时间(70 d)、提高鲜菇产量(37.81 kg)及生物学效率(25.21%)方面表现最优。此外,不同基质配方还显著影响了大球盖菇的营养成分和微量元素含量,处理1在总膳食纤维和干样蛋白质含量上表现较好,处理5在粗脂肪和多酚含量上表现突出。

- Taking Stropharia rugosoannulata as the test materials,the single-factor and orthogonal experiments were employed to investigate the optimization of carbon sources,nitrogen sources,and pH conditions for the mother culture medium of Stropharia rugosoannulata,as well as the effects of different substrate formulations on its fruiting time,yield,and nutritional components,in order to provide reference for the industrial production of Stropharia rugosoannulata.The results showed that corn flour,wheat bran,and soybean meal served as optimal carbon and nitrogen sources for mycelial growth,whereas peptone significantly inhibited mycelial development.Through single-factor and orthogonal experiments,the optimal medium composition was determined to be corn flour (3 g·L-1),wheat bran (3 g·L-1),and soybean meal (2 g·L-1) at pH 6.Notably,different substrate formulations exerted significant impacts on the fruiting time,yield,and nutritional components of S.rugosoannulata.Among these,substrate formulation in treatment 3 demonstrated the best performance in shortening fruiting time (70 days),increasing fresh mushroom yield (37.81 kg),and improving biological efficiency (25.21%).Additionally,substrate formulations significantly influenced the nutritional and trace element contents of S.rugosoannulata,treatment 1 exhibited superior total dietary fiber and dry protein contents,while treatment 5 showed prominent crude fat and polyphenol contents.
