- 以蛹虫草浸提液和原料乳为试材,添加各种辅料,在单因素试验基础上,采用正交实验设计,研究了蛹虫草发酵乳饮料的最佳配方。结果表明:蛹虫草发酵乳饮料的最佳配方为蛹虫草浸提液35%+发酵乳52.5%,添加复合稳定剂0.5%、蔗糖11%、柠檬酸0.2%,在此条件下得到的产品稳定性好,口感佳。

- TakingCordycepsmilitarisextractsandfreshmilkasmainrawmaterialsandwiththeadditionofdifferentminoringredients,onthebasisofthesinglefactorexperiment,orthogonaltestwasadoptedtodecideabestformulaofafermentedmilkbeveragewithCordycepsmilitaris.TheresultsshowedthattheoptimalformulaofthebeverageweretheCordycepsmilitarisextracts35%plusfermentedmilk52.5%,compositestabilizer0.5%,sucrose11%,andcitricacid0.2%,undertheseconditions,theproductobtainedgoodstabilityandgoodtaste.
