- 以乌饭树叶色素为试材,研究了温度、光照、pH、金属离子和氧化剂对乌饭树叶色素稳定性的影响。结果表明:乌饭树叶色素在低于100℃和光照条件下稳定性较好,不易褪色;在酸性条件下比较稳定,在碱性条件下不稳定;Cu2+、Zn2+对乌饭树叶色素有增色效应,但影响不大,Fe3+对色素增色效应影响较大;乌饭树叶色素能被氧化剂H2O2氧化,使色素色泽变浅。
- Abstract:
- Taking pigment extracted from Vaccinium bracteatum Thumb.leaves as experimental material,the effects of temperature,light,pH,metal ions and oxidizing agents on the stability of pigment were studied.The results showed that the pigment was stable when heating below 100℃,exposuring in light or in acidification,but it was very sensitive to alkalinity.Cu2+ and Zn2+ had hyperchromic effect on this pigment,but the impact was not big,Fe3+ had larger hyperchromic effect on this pigment.The pigment could be oxidized by H2O2,and the pigment color became shallow.
