- 以乙醇为溶剂,采用微波辅助法从贺州大肉姜中提取抑菌活性成分,研究了大肉姜乙醇提取物对食品中常见的几个污染菌的抑菌作用。结果表明:大肉姜乙醇提取物对大肠杆菌、金黄色葡萄球菌、酵母菌、黑曲霉均有明显抑制作用,其MIC值分别0.03125%、0.0625%、0.0078%、0.1250%;该抑菌活性成分在一定范围的温度、pH环境条件下仍然能保持较好的稳定性。
- Abstract:
- Effective components from Zingiber officinale Roscoe were extracted by using ethanol as solvent,and the antibacterial action of Zingiber officinale Roscoe were studied.The results showed that microorganism likeEcherichia coli、Staphylo-coccus aureus,Saccharomyces cere-visiae, Aspergillus sp were inhibited well by the extracts of Zingiber officinale Roscoe.The MIC for each kind of microorganism was respectively as follows:0.03125%,0.0625%,0.0078%,0.1250%;the stability of the extracting solution was well under certain temperature and pH.
