- 以乙醇为溶剂，采用微波辅助法从贺州大肉姜中提取抑菌活性成分，研究了大肉姜乙醇提取物对食品中常见的几个污染菌的抑菌作用。结果表明：大肉姜乙醇提取物对大肠杆菌、金黄色葡萄球菌、酵母菌、黑曲霉均有明显抑制作用，其MIC值分别0.03125%、0.0625%、0.0078%、0.1250%；该抑菌活性成分在一定范围的温度、pH环境条件下仍然能保持较好的稳定性。
- Abstract:
- Effective components from Zingiber officinale Roscoe were extracted by using ethanol as solvent，and the antibacterial action of Zingiber officinale Roscoe were studied.The results showed that microorganism likeEcherichia coli、Staphylo-coccus aureus,Saccharomyces cere-visiae, Aspergillus sp were inhibited well by the extracts of Zingiber officinale Roscoe.The MIC for each kind of microorganism was respectively as follows：0.03125%，0.0625%，0.0078%，0.1250%；the stability of the extracting solution was well under certain temperature and pH.
