- 以杏鲍菇为试材,采用50 μm与70 μm 2种厚度的聚乙烯(PE)膜包装杏鲍菇,在4 ℃下贮藏12 d,每隔3 d测定杏鲍菇的生理品质、能量代谢及抗氧化相关指标,研究不同厚度PE膜包装下杏鲍菇能量代谢与活性氧代谢变化对杏鲍菇贮藏品质的影响,以期为杏鲍菇的采后品质调控与贮藏技术提供参考依据。结果表明:50 μm PE膜拥有更好的气体渗透性,避免了袋内二氧化碳(CO2)浓度过高而氧气(O2)浓度过低。同时50 μm PE膜可维持杏鲍菇的高能荷水平与能量代谢关键酶活力的稳定,促进超氧化物歧化酶(SOD)、过氧化氢酶(CAT)、过氧化物酶(POD)活性的提升以及总酚、类黄酮的合成,显著降低了失重率,抑制贮藏前期丙二醛(MDA)含量和相对电导率的上升,减少了可溶性蛋白质和总糖的损失。综上所述,50 μm PE膜通过调控袋内适宜的CO2/O2比例,避免了无氧呼吸过强造成的能量不足和物质消耗,并激活了杏鲍菇抗氧化系统,从而有效抑制氧化损伤,延缓了杏鲍菇贮藏期间的品质劣变。
- Abstract:
- Taking Pleurotus eryngii as the test material,polyethylene (PE) films with thicknesses of 50 μm and 70 μm were used to package Pleurotus eryngii.The Pleurotus eryngii was stored at 4 ℃ for 12 days,and its physiological quality,energy metabolism,and antioxidant related indicators were measured every 3 days.The effects of changes in energy metabolism and reactive oxygen species metabolism of Pleurotus eryngii under different thicknesses of PE film packaging on their storage quality were studied,in order to provide reference for postharvest quality control and storage technology of Pleurotus eryngii.The results showed that 50 μm PE film had better gas permeability and avoided excessive concentration of carbon dioxide (CO2) and low concentration of oxygen (O2) inside the bag.At the same time,50 μm PE film could maintain the high energy charge level and stable energy metabolism key enzyme activity of Pleurotus eryngii,promote the increase of superoxide dismutase (SOD),catalase (CAT),peroxidase (POD) activity,and the synthesis of total phenols and flavonoids,significantly reduce weight loss rate,inhibit the increase of malondialdehyde (MDA) content and relative conductivity in the early storage stage,and reduce the loss of soluble protein and total sugar.In summary,the 50 μm PE film avoids energy deficiency and material consumption caused by excessive anaerobic respiration by regulating the appropriate CO2/O2 ratio inside the bag,and activates the antioxidant system of Pleurotus eryngii,effectively inhibits oxidative damage and delays quality deterioration during storage.
