- 风土决定了葡萄酒的品质和特点,土壤因素参与了酿酒葡萄浆果的酚类化合物生物合成,不同土壤类型下酿酒葡萄成熟度差异显著,同一产区相同气候条件下土壤类型对酿酒葡萄品质风格的影响较大。该试验以“赤霞珠”葡萄为试材,分析了贺兰山东麓产区3种典型土壤所产酿酒葡萄的成熟度及品质指标。结果表明:风沙土产地酿酒葡萄成熟期最早,所产酿酒葡萄果实糖分、可溶性固形物、糖酸比和花色苷含量最高;灰钙土产葡萄成熟期适中,总酚和单宁含量均最高;灌淤土产葡萄成熟期较长,果实酸度偏高,葡萄各品质指标均有所降低。
- Abstract:
- Terroir determines the wine quality and characteristics,soil factors are involved in the wine grape berries phenolic compounds biosynthesis,the maturity of wine grape is significantly difference under different soil types,at the same climatic conditions,the influence of soil types on the quality of wine grape is larger in the same region.‘Cabernet Sauvignon’ grape was used as test material,the grape maturity and quality were analyzed in eastern foot of Helan Mountain.The results showed that the maturity and quality index of wine grape by producing in three typical soils at eastern foot region of Helan Mountain,the mature period of wine grape was the earliest in the aeolian soil,also the sugar content,soluble solids,sugar acid ratio and anthocyanin contents of wine grape were the highest.The mature period of wine grape was moderate in the sierozem soil,the content of total phenol and tannin were significantly improved.However mature period of wine grape was longer in the irrigation-warping soil,it could increase the acidity of fruit,and the quality indexes of grape decreased.
