Abstract:
Taking Morchella sextelata as test material,the activities of mycelial TTC-dehydrogenase,carboxymethyl cellulase,amylase,guaiacol oxidase,and residual reducing sugar content were investigated by liquid-state culture,the mycelial activity and metabolism of M.sextelata in different growth phase were studied,in order to provide an effective way for detection of mycelial activity and fermentation management with Morchella spp.and other edible fungi.The results showed that the activity changes of the five enzymes rised first and fell after in growth phase.There was a certain correlation between the activity of different enzymes.The mycelium had the strongest vitality and fast growth rate at 4-12 days,which was the best period for the production of liquid strains.
