Abstract:
To study the difference of nutritional ingredients in Auricularia heimuer from different places,and provide theoretical support for adjusting dietary structure and developing new products of Auricularia heimuer.In this study,Auricularia heimuer from 9 different places such as Jilin,Heilongjiang,Liaoning,Hebei,Hubei,Xinjiang,Zhejiang,Jiangxi and Tibet were taken as materials.The conventional nutrient ingredients in Auricularia heimuer were analyzed by the national standard method,the amino acid content in Auricularia heimuer was analyzed by high performance liquid chromatography,the mineral content was detected by inductively coupled plasma-mass spectrometry and the fatty acid content was determined by gas chromatography.The results showed that there were some differences in conventional nutrient ingredients in Auricularia heimuer from different places.The ash contents and crude fat of Auricularia heimuer in Jiangxi,dietary fiber of Auricularia heimuer in Jilin,crude protein and total sugar of Auricularia heimuer in Zhejiang and crude polysaccharide of Auricularia heimuer in Liaoning were significantly higher than those in other places (P<0.05).The essential amino acid content of Auricularia heimuer in Liaoning and Zhejiang was higher,reaching 41.89 and 39.20 g·kg-1 respectively,accounting for 45.52% and 38.02% of the total amino acid content.The content of taste amino acid and medicinal amino acid in Auricularia heimuer in Zhejiang was significantly higher than that in other places.The Fe,Ca and Zn contents of Auricularia heimuer in Jiangxi were significantly higher than those in other 8 places (P<0.05);a total of 23 fatty acids were detected,including 9 saturated fatty acids and 14 unsaturated fatty acids.The correlation and principal ingredient analysis of nutritional ingredients showed that ash content,dietary fiber,crude fat,crude protein,total sugar and crude polysaccharide were the main quality indicators.Comprehensive evaluation showed that the quality of Auricularia heimuer was better in Tibet,Hubei and Jilin.
