Abstract:
Flavonoids are important secondary metabolites,which have been widely concerned for their antioxidant and free radical scavenging effects.And strawberries are one of the most seven fruits in the world,and had higher nutritional value and economic value.A large number of studies showed that strawberries were rich intraditional nutrients including vitamins,minerals,dietary fiber and other,and functional components such as flavonoids,anthocyanin,chlorogenic acid and other phenolic acids.In this study,the latest studies on flavonoids in strawberries were reviewed from five aspects,including the composition and content,the change rules during the growing and storage periods,the extraction and detection methods,metabolism and the prospect of the future of flavonoids in strawberry,in order to provide reference for the studies of the functional constituents and breeding of strawberry.
