- 以‘珍玉’西葫芦为试材,采用褪黑素处理的方法,研究了褪黑素处理对西葫芦果实低温(4±0.5)℃贮藏期间冷害、品质和抗氧化酶活性的影响,以期为西葫芦的贮藏提供参考依据。结果表明:褪黑素处理可显著降低西葫芦果实冷害指数、冷害率和失重率,抑制叶绿素含量下降及a*值和b*值上升,并保持较高的硬度和维生素C含量。同时褪黑素处理提高了超氧化物歧化酶、过氧化氢酶、谷胱甘肽还原酶和抗坏血酸过氧化物酶活性,抑制了丙二醛含量和相对膜透性上升。综上所述,褪黑素处理可能通过提高抗氧化酶活性和维持膜透性减轻西葫芦果实冷害。
- Abstract:
- Taking ‘Zhenyu’ zucchini as test material,the effects of melatonin treatment on chilling injury,fruit quality,and antioxidant enzyme activity of zucchini during low-temperature (4±0.5)℃ storage were investigated,which expect to provide a reference for the storage of zucchini.The results showed that melatonin treatment significantly reduced the chilling injury index,chilling injury incidence,and weight loss rate,inhibited decreases in chlorophyll and increases in a* value and b* value,while maintained higher firmness and vitamin C levels of zucchini fruits.In addition,melatonin treatment increased the activities of superoxide dismutase,catalase,glutathione reductase,and ascorbate peroxidase,inhibited increases in relative membrane permeability and malondialdehyde content of zucchini fruits.In conclusion,the melatonin treatment might alleviate chilling injury in zucchini by increasing antioxidant enzyme activity and maintaining cytomembrane permeability.
