- 以4种不同类型的苦瓜品种为材料,探究苦瓜果实发育过程中维生素C、皂苷、可溶性蛋白质、黄酮、多糖、叶绿素和花色苷等7种有机成分的动态变化规律。结果表明:随着苦瓜果实的发育,单位质量果肉中7种有机成分的含量均有较大变化,其中维生素C、皂苷、可溶性蛋白质和黄酮随果实发育出现升降波动,且不同苦瓜品种变化趋势不同;随果实的发育多糖逐渐增加,而叶绿素和花色苷逐渐降低。
- Abstract:
- Four different bitter gourd varieties were taken as materials,and the dynamic changes of seven organic components in the development of balsam pear fruit were explored.The results showed that with the development of balsam pear fruit,the contents of seven organic compounds in pulp per unit mass changed greatly,polysaccharide content increased gradually,chlorophyll content and anthocyanin content decreased gradually,while vitamin C content,saponin content,soluble protein content and flavonoid content showed an increase-decrease fluctuation,and trend of their change were closely related to balsam pear varieties.
