- 为了研究在高CO2气调环境下O2对CO2伤害的缓解作用,在固定40% CO2情况下,分别设置O2为30%、40%、50%和60%(N2平衡),同时以自然大气为对照,对5 ℃贮藏条件下西兰花的乙烯释放量、呼吸强度、失重率、黄化率、叶绿素含量、抗坏血酸总量、乙醇及乙醛含量进行定期测定。结果表明:过低或过高的O2比例都会对西兰花贮藏品质造成不利影响,O2比例过低易造成西兰花无氧呼吸生成乙醇、乙醛,O2比例过高则造成西兰花生理活动加快,促使营养物质的迅速消耗和黄花率的上升;在固定40% CO2前提下,随着O2比例的升高,西兰花乙烯释放量和呼吸速率随之上升,叶绿素含量下降速率加快,黄花率增大,但乙醇、乙醛含量降低;只有合适的O2/CO2比例,才能较好的保持西兰花贮藏品质,该试验条件下,以40% O2+40% CO2最好。
- Abstract:
- The objective of this paper was to investigate the alleviation of O2 to high CO2 injury of broccoli during controlled atmospheres storage.In this experiment,based on 40% CO2,O2 were set as 30%,40%,50% and 60%,respectively(balanced by N2),and natural air was used as CK.During storage under 5 ℃,the ethylene production,respiration rate,weight loss,etiolating rate,chlorophyll and ascorbic acid content,ethanol and acetaldehyde contents,of broccoli,were periodically determined.The results showed that,extremely high or low O2 both adversely affected the storage quality of broccoli,low O2 easily led to anaerobic respiration and produced ethanol and acetaldehyde,high O2 would accelerate physiological activity such as etiolating rate and cause nutrient depletion.On the premise of 40% CO2,with the increasing of O2,ethylene production,respiration and etiolating rate were increased,while the chlorophyll content,ethanol and acetaldehyde contents,were decreased.Only the proper O2/CO2 proportion behaved a good storage quality.In this experiment condition,the best treatment was 40% O2+40% CO2.
