- 在简要介绍酿酒酵母的改良方法基础上,综述了转基因技术在改良酿酒酵母中在提高发酵性能、改善葡萄酒感官特性、改善葡萄酒功能成分方面的应用,论述了转基因技术目前在酿酒工业中的进展情况,并对未来的发展进行了展望。
- Abstract:
- Based on brief introduction of modifying methods of Saccharomyces cerevisiae,the application of transgenic technology in modifying Saccharomyces cerevisiae,such as enhancing fermenting property,improving sensory characteristic functional component of wine were summarized.Current progress of transgenic technology in the wine industry and the future development were also discussed.
