- 测定了个旧周边地区11个芦笋种植点的芦笋样品中蛋白质、还原糖、有机酸、维生素C和黄酮的含量,并用模糊数学的隶属函数法对11个样品的综合营养品质进行了评价。结果表明:个旧地区芦笋含蛋白质6.11~11.12 mg/g、还原糖17.59~42.85 mg/g、维生素C 32.47~44.81 mg/100g、黄酮5.21~8.91 mg/100g,有机酸含量为0.35%~1.42%;品质优良的样品有3个,平均隶属函数值均在0.5以上,占样品总数的27%;品质良好的有1个(0.5>X>0.4),平均隶属函数值为0.4120,占样品总数的9.09%;营养品质一般的(0.4>X>0.3)有6个,占样品总数的54.55%,其平均隶属函数值均在0.30以上;营养品质较差的有1个,占样品总数的9.09%。
- Abstract:
- The study determined the Asparagus’ nutritional quality of 11 Asparagus planting points in Gejiu area.It mainly determined 5 nutritive indices such as protein,reducing sugars,organic acid,avonoids and vitamin C,evaluated the comprehensive nutritional qualities of 11 samples with the method of Fuzzy Mathematics’ Subordination Function.The results showed the samples’ qualities of asparagus in Gejiu area were protein content 6.11~11.12 mg/g,reducing sugar 17.59~42.85 mg/g,VC 32.47~44.81 mg/100g,flavone 5.21~8.91 mg/100g,organic acid 0.35%~1.42%;there had 3 excellent quality varieties,their average subordination functions were above 0.50,accounting for 27% of the samples;the better comprehensive quality of nutrition was C4,its’ average subordination function was 0.4120;accounting for 9.09% of samples;the comprehensive nutritional qualities of normal were six(0.4>x>0.3),accounting for 54.55 of samples,average subordination functions were above 0.30;one the worst quality sampe,accounting for 9.09% of the samples.
