- 以沧州金丝小枣为试材,采用水浴浸提的方法,研究了金丝小枣红色素的最佳提取条件及其稳定性,以期确定料液比、NaOH浓度、提取时间和提取温度对红色素提取的影响,以及温度、光照、金属离子、甜味剂等对金丝小枣红色素稳定性的影响。结果表明:金丝小枣红色素的最佳提取条件为料液比1∶10 g?mL-1,氢氧化钠浓度4.0%,提取时间4 h,提取温度80 ℃。金丝小枣红色素在直射光、过氧化氢、强氧化剂及富含Fe3+的环境中稳定性较差。
- Abstract:
- Taking Cangzhou jujube as the test material, the optimum extraction conditions and stability of the red pigment of the jujube were studied by water bath extraction. In order to determine the effect of the material-liquid ratio, NaOH concentration, extraction time and extraction temperature on the extraction of red pigment, as well as the effects of temperature, light, metal ions and sweeteners, etc. on the stability of the red pigment. The results showed that the optimal extraction conditions for pigment of jujube were material-liquid ratio 1∶10 g?mL-1, sodium hydroxide concentration 4%, extraction time 4 hours, extraction temperature 80 ℃. The jujube red pigment was less stable in direct light, strong hydrogen peroxide oxidant and Fe3+ rich environment.
