- 以早中熟品种“宁秋”“嘎啦”和“鲁丽”苹果为试材,采用非靶向代谢组学 (UHPLC-OE-MS)分析方法,研究了“宁秋”苹果成熟过程中(青果期S1/转色期S2/成熟期S3)代谢组分对总糖的影响,以期为苹果糖分资源的充分利用提供参考依据。结果表明:“宁秋”苹果具有优质的风味,并分析了淀粉和蔗糖代谢(starch and sucrose metabolism)、半乳糖代谢(galactose metabolism)、果糖和甘露糖代谢(fructose and mannose metabolism)初级代谢等主要 KEGG 途径。“宁秋”苹果果实发育过程中糖含量增加的原因与纤维生物糖、蔗糖、海藻糖、塔格糖、异亮氨酸、肌醇、葡萄糖醇、荆芥苷的合成有关。
- Abstract:
- Taking early to mid maturing varieties of ‘Ningqiu’‘Gala’,and ‘Luli’ apples as test materials,non targeted metabolomics (UHPLC-OE-MS) analysis method was used to study the effects of metabolic components on total sugar during the ripening process of ‘Ningqiu’ apples (green fruit stage S1/color transformation stage S2/ripening stage S3),in order to provide reference for the full utilization of apple sugar resources.The results showed that ‘Ningqiu’ apples had high-quality flavor,and the main KEGG metabolites such as starch and sucrose metabolism,galactose metabolism,and fructose and mannose metabolism were analyzed.The reason for the increase in sugar content during the development of ‘Ningqiu’ apple fruit was related to the synthesis of fiber biogenic sugars,sucrose,trehalose,tagatose,isoleucine,inositol,glucitol,and puerarin.
