- 以广叶绣球菌为试材,采用0.07 mm的低密度聚乙烯袋,在0.08、0.06、0.04、0.02 MPa下抽真空处理,置于(4.0±0.5)℃下贮藏35 d,研究了抽真空处理对广叶绣球菌采后生理和贮藏品质的影响,以期为广叶绣球菌的保鲜贮藏提供参考依据。结果表明:相对于未抽真空的常压处理(0.10 MPa),除0.02 MPa使广叶绣球菌的生理生化及品质变化出现异常外,抽真空处理显著减缓了子实体呼吸强度的升高,抑制了多酚氧化酶(PPO)活性和丙二醛(MDA)含量的升高,保持了较高的过氧化氢酶(CAT)活性,在不同程度上保持了贮藏期广叶绣球菌瓣片的色泽、子实体基部的内聚性和瓣片的弹性。适当的抽真空处理可以有效延缓广叶绣球菌的成熟与衰老进程,较好地保持其品质,有效延长其贮藏期,与其他处理相比,0.04 MPa抽真空处理广叶绣球菌的贮藏保鲜效果较佳。
- Abstract:
- The experiment was carried out with Sparassis latifolia as the test materials,were vacuumed under 0.08,0.06,0.04,0.02 MPa with 0.07 mm low-density polyethylene bags,and stored in (4±0.5)℃ for 35 days.The effects of vacuum treatment on the post harvest physiology and storage quality of Sparassis latifolia were studied,in order to provide reference for the preservation and storage of Sparassis latifolia.The results showed that vacuum treatments effectively reduced the respiration rate of Sparassis latifolia fruit-bodies,inhibited the activity of polyphenol oxidase (PPO) and the increase of malondialdehyde (MDA),maintained the activity of catalase (CAT),maintained the color of Sparassis latifolia lobes,the cohesiveness of bases and springiness of lobes of fruit-bodies at different degrees,compared with normal pressure (0.10 MPa) treatment that was not pumped vacuum.The changes of storage quality did not obey the law when Sparassis latifolia was stored under 0.02 MPa.The vacuum treatments in appropriate range could effectively delay the ripening and senescence process of Sparassis latifolia,maintain the quality and prolong the storage time.Compared with all other treatments,the effect of vacuum treatment on Sparassis latifolia under 0.04 MPa was better.
