- 以新鲜的金针菇为试材,分别以高透性乙烯均聚物(PE)包装膜、中等透性聚乳酸(PLA)包装膜、低透性偏氯乙烯-氯乙烯均聚物(VCVDC)包装膜为包装材料,采用在温度10 ℃、湿度90%~95%条件下贮藏12 d内的方法,研究了不同透性薄膜包装下金针菇主要酶活性、营养成分变化规律及保鲜效果的影响,以期为金针菇保鲜透性包装膜的选用提供参考依据。结果表明:贮藏12 d后,PLA包装膜包装下的金针菇超氧化物歧化酶(SOD)、过氧化物酶(POD)活性分别为21.70、40.31 U?mg-1,均低于PE及VCVDC包装,过氧化氢酶(CAT)、多酚氧化酶(PPO)活性分别为72.88、50.29 U?mg-1,均高于PE及VCVDC包装。贮藏12 d后,PLA包装膜包装下的金针菇失重率在PE及VCVDC包装之间,而可溶性固形物、可溶性蛋白质、多糖及16种氨基酸总含量均高于PE及VCVDC包装。PLA包装膜对于提高金针菇的保鲜效果优于PE及VCVDC包装膜,可有效降低贮存时间延长造成的品质下降。

- Taking fresh Flammulina velutipes as the test material,and high permeability polyethylene (PE) packaging film,medium permeability polylactic acid (PLA) packaging film,low permeability vinylidene chloridEvinyl chloride homopolymer (VCVDC) packaging film as packaging materials,the changes of main enzyme activities and nutrient components of Flammulina velutipes in different permeable film packaging were investigated,the effects of different permeable packaging films on the preservation effects of Flammulina velutipes were explored after storing under the conditions of temperature 10 ℃ and humidity 90%-95% for 12 days,in order to provide reference for the selection of permeable packaging film to keep Flammulina velutipes fresh.The results showed that after 12 days of storage,SOD and POD activities of Flammulina velutipes packaged with PLA were 21.70 U?mg-1 and 40.31 U?mg-1,respectively,which were lower than those of PE and VCVDC packaging.The activities of CAT and PPO were 72.88 U?mg-1 and 50.29 U?mg-1,respectively,which were higher than those of PE and VCVDC packaging.After 12 days of storage,the weight loss rate of Flammulina velutipes under PLA packaging film packaging was between PE and VCVDC packaging,while the contents of soluble solid,soluble protein,polysaccharide and total 16 amino acids were higher than those of PE and VCVDC packaging.PLA packaging film was better than PE and VCVDC packaging film in improving the preservation effect of Flammulina velutipes,which could effectively reduce the quality degradation caused by prolonged storage time.
