- 以蛹虫草为试材,研究了不同储存时间对新鲜蛹虫草中多糖、虫草酸、总黄酮及7种核苷类成分含量的影响。结果表明:随着处理时间的递增,蛹虫草颜色由橙黄色变为暗黄色,最终变为黑色;气味由菌香味变为腐烂臭味;储存时间对新鲜蛹虫草中化学成分含量影响明显,其中的化学成分变化规律为多糖含量先下降后升高,而总黄酮含量则是先升高后降低,虫草酸含量变化为逐步下降;尿嘧啶和腺嘌呤含量逐渐升高,与之相反,腺苷、虫草素和鸟苷含量则是逐渐降低,尿苷和肌苷含量先升高后降低。三次曲线方程可用于描述新鲜蛹虫草中化学成分含量与储存时间的变化关系。多糖、虫草酸、尿嘧啶、腺嘌呤、腺苷和虫草素等指标,可用于新鲜蛹虫草质量控制。
- Abstract:
- The effect of storage time on the contents of polysaccharides,mannitol,total flavonoids,and 7 nucleosides (uracil,uridine,inosine,guanosine,adenine,adenosine and cordycepin) in fresh Cordyceps militaris were studied in this paper.The results suggested that the colour of the stroma of C.militaris turned from orange to dark orange,eventually turned black,and the mushroom flavor of samples turned into a rotten smell with the increasing of treatment duration.The storage time had an obvious influence on the chemical components of C.militaris,and the changes rule of chemical components in C.militaris were summarized as follows,the content of polysaccharides first decreased and then increased,however,the content of total flavonoids was increased in initial stage and then declined,the content of mannitol decreased gradually;in addition,the contents of uracil and adenine increased with the time increasing,on the contrary,the levels of adenosine,cordycepin and guanosine decreased gradually,the contents of uridine and inosine increased at first and decreased after a period of time,the cubic curve-fitting equations could be used to describe the changes of chemical components in fresh C.militaris with storage time.The results indicated that the changes of the contents of polysaccharides,mannitol,uracil,adenine,adenosine and cordycepin could be used as the quality control indexes of fresh C.militaris.
