甘蔗渣栽培的不同颜色侧耳中的氨基酸组成与蛋白质营养评价

- 以金顶侧耳(Pleurotus citrinopileatus)、红平菇(Pleurotus djamor)、秀珍菇(Pleurotus geesteranus)、平菇(Pleurotus ostreatus)为研究对象,测定了甘蔗渣栽培的4种不同颜色侧耳子实体样品的蛋白质含量和氨基酸组成(EAA),分析比较呈味氨基酸(FAA)、芳香族氨基酸(AAA)和支链氨基酸(BCAA)含量,通过氨基酸评分(AAS)、化学评分(CS)、氨基酸比值系数分(SRC)、氨基酸指数(EAAI)、生物价(BV)和营养指数(NI)等指标,评价不同颜色侧耳的营养价值。结果表明:金顶侧耳的氨基酸含量、AAA含量及AAS最高;红平菇的EAA、CS、SRC、EAAI和BV最高;秀珍菇的粗蛋白含量、BCAA含量、FAA含量和NI最高;而这些指标中评分最低的均为白色平菇。4种不同颜色侧耳必需氨基酸含量均高于WHO/FAO模式值,但低于标准卵清蛋白,金顶侧耳的第一限制氨基酸为亮氨酸,而白色平菇,红平菇和秀珍菇的第一限制氨基酸均为蛋氨酸+半胱氨酸。4种不同颜色侧耳氨基酸和蛋白质评价结果表明,甘蔗渣栽培的不同颜色侧耳子实体氨基酸和蛋白质营养丰富,彩色侧耳(黄色金顶侧耳、红平菇和灰黑色秀珍菇)的营养价值比白色平菇高。
- Abstract:
- The subjects of this study were Pleurotus citrinopileatus,Pleurotus djamor,Pleurotus geesteranus and Pleurotus ostreatus,the protein content and amino acid composition of four kinds of color Pleurotus samples cultivated with bagasse were determined.The flavor amino acids (FAA),aromatic amino acid (AAA) and branched chain amino acids (BCAA) were determined and the nutritional value of different samples was evaluated by the indexes of amino acid score (AAS),chemical score (CS),score of ratio coefficient of amino acid (SCR),essential amino acid index (EAAI),biological value (BV) and nutrition index(NI).The results indicated that the content of amino acids,AAA content and AAS value were the highest in P.citrinopileatus,P.djamor had the highest EAA,CS,SRC,EAAI and BV value and P.geesteranus had the highest crude protein content,BCAA content,FAA content and NI value,nevertheless.in these indicators the lowest scores were P.ostreatus.The content of essential amino acid in four different colors samples was slightly higher than the WHO/FAO model value,but lower than the standard egg white protein.The first restricted amino acid leucine in the P.citrinopileatus,however the other three Pleurotus(P.djamor,P.geesteranus,P.ostreatus) were all methionine+cysteine.The results of amino acid and protein evaluation showed that the nutritional value of colorful Pleurotus (P.citrinopileatus with yellow,P.djamor with red and P.geesteranus with black gray) was significantly higher than that of white color P.ostreatus.
