酶法提取银耳下脚料可溶性膳食纤维及其抗氧化活性研究

- 以银耳加工下脚料为原料,探索了纤维素酶法提取可溶性膳食纤维(SDF)的最佳工艺条件,并对不同提取方式银耳SDF的抗氧化活性进行了比较研究,为银耳健康产业的可持续发展提供参考。结果表明:纤维素酶添加量15 mg?g-1,酶解时间3.5 h,物料粒度120目,料液比为1∶70 g?mL-1,此时SDF的提取率最高,达到36.7%。酶法制得SDF对?OH、DPPH?、H2O2清除率以及还原能力分别为56%、28%、36%和86.3%,与水提SDF相近,且明显优于酸法和碱法提取。
- Abstract:
- The optimum conditions for the extraction of soluble dietary fiber (SDF) by cellulose were explored by using tremella scraps.The antioxidant activity of SDF in different extraction methods were compared.The results showed that the cellulase addition amount was 15 mg?g-1,the enzymolysis time was 3.5 h,the particle size was 120 mesh and the solid-liquid ratio was 1∶70 g?mL-1.Under this condition the extraction rate of SDF was the highest,reaching 36.7%.The ?OH,DPPH?,H2O2 scavenging rate and reducing ability of SDF were 56%,28%,36% and 86.3%,respectively,which were similar to water extraction,and were better than acid and alkaline extraction.
