- 分别以花生红衣、山竹(泰国山竹)果壳、南丰蜜桔果皮、福建蜜柚果皮为材料,研究了不同质量分数葡萄糖、酸碱度和温度等因素对4种果皮理化特性的影响,并对其持水性、溶胀性进行对比分析。结果表明:4种果皮溶胀性和持水性影响程度的顺序依次为温度>葡萄糖>pH值,花生红衣和福建蜜柚皮在综合条件(pH 11、100℃、10% 葡萄糖溶液(GS))影响最大,(pH 7、20℃、2% GS)影响最小;南丰蜜桔皮(pH 11、100℃、8% GS)影响最大,(pH 7、20℃、12% GS)影响最小;泰国山竹皮(pH 11、100℃、12% GS)影响最大,(pH 7、20℃、6% GS)影响最小。研究结果为4种果皮的综合开发和利用提供参考和依据。
- Abstract:
- Taking red skin of peanut,mangosteen (Thai mangosteen) shell,peel of Nanfeng mandarin orange and Fujian pomelo as material,the impact of different mass fractions of glucose,pH value and temperature on the physical and chemical characteristics of the four peels were investigated.Besides,a comparative analysis of their water holding capacity and swelling capacity was conducted.The results showed that,for the four kinds of peels,the impact on water holding capacity and swelling capacity was in a descending order of temperature,mass fractions of glucose and pH value.For the red skin of peanut and peel of Fujian pomelo,it impacts greatest when under the conditions of pH 11,100℃,10% glucose solution (GS) and with the least impact at pH 7,20℃,2% GS.For peel of Nanfeng mandarin orange,it impacts greatest at pH 11,100℃,8% GS and with the least impact at pH 7,20℃,12% GS.For Thai mangosteen shell,it impacts greatest at pH 11,100℃,12% GS and with the least impact at pH 7,20℃,6% GS.The findings will provide reference and foundation for the comprehensive development and utilization of the four kinds of peels.
