- 物理技术的发展为果蔬采后处理技术提供了新的思路和途径,现从电场、磁场、超声波、光波、热、压力技术6个方面,综述了近年来物理技术处理果蔬的研究与应用成果,并对其发展做了初步展望。

- Anewwayforfruitsandvegetablespost-harvestprocessingwasprovidedwiththedevelopmentofphysicaltechnologies.Therecentresearchesandadvancesoftheapplicationofphysicaltechnologiesinfruitsandvegetablesprocessingweresummarizedfromelectricfield,magneticfield,ultrasonicwave,lightwave,heatingandpressuretechnologies,andtheprospectsforfuturedevelopmentofitwerepresented.
