- 对血皮菜、紫云英、鱼腥草、香椿、水芹、竹叶菜、峨眉韭7种峨眉山野生蔬菜的营养成分进行了测定。结果表明:7种蔬菜中水芹菜粗纤维含量最高,香椿含量最低;水芹可溶性蛋白的含量最高,竹叶菜的含量最低,水芹是竹叶菜的7倍;水芹可溶性总糖的含量最高,紫云英的含量最低,水芹是紫云英的33倍;香椿维生素C含量最高,峨眉韭含量最低,香椿是峨眉韭的6倍;竹叶菜铁含量最高,紫云英含量最低,竹叶菜是紫云英的8倍。峨眉山7种野生蔬菜各种营养指标基本上都高于常见的食用蔬菜。
- Abstract:
- The aim was to detect the main nutrient contents in 7 kinds of edible wild herbs from Mountain Emei and to evaluation their edible value.Edible wild herbs were randomly sampled from Mountain Emei,and contents of main nutrient in edible wild herbs were determined with classical methods.The results showed that Oenanthe clecumbens’ nutrient contents which include crude fiber,crude protein and carbohydrate were higher than other edible wild herbs.Besides,Ailanthus altissima(Mill.)Swingle had the highest content of vitamin C.Additionally,wild vegetables’ main nutrient contents were higher than that in normal vegetable.
