摘要:
以采自陕西凤县野生菊苣地上幼嫩茎叶为试材，对其营养成分进行了分析测定。结果表明：野生菊苣蛋白质含量为2.29%，每100 g新鲜野菜中可溶性糖、维生素C、胡萝卜素、柠檬酸、苹果酸和延胡索酸的含量分别为11.0、9.9、0.3、113.4和19.3 g。
Abstract:
Taking wild Cichorium intybusLinn as the material,the nutritional components of wild Cichorium Intybus Linn.were studied.The results showed that content of protein in wild Cichorium intybus Linn.was 2.29%.Soluble sugar,vitamin C,carotene,citric acid,malic acid and fumaric acid were respectively 50.8,11.0,9.9,0.3,113.4 and 19.3 gram per 100 gram fresh vegetable.
