Abstract:
Sprouts are nutrient rich functional vegetables,whose mineral composition and enrichment features determine their edible value and application potential.This study systematically illustrated the physiological roles of Ca,Fe,Mg,Zn and other minerals for human health,compared mineral content and genetic traits across different families,clarified regulatory effects of cultivation conditions on mineral accumulation and bioavailability,and summarized key improvement strategies including genetic screening,biofortification,precise environmental control and antinutrient reduction,in order to provide references for nutritional quality improvement,efficient cultivation and high value utilization of sprouts,thereby boosting the high quality development of the sprout industry.
