Abstract:
Taking chieh-qua as the test material,different concentrations (0.5%,1.0% and 1.5%) of chitosan were used to coat chieh-qua for 3 minutes,and no treatment was used as control.Sensory evaluation,weight loss rate,vitamin C,soluble solids,soluble sugars,soluble proteins,malondialdehyde contents,and activities of catalase,peroxidase,and polyphenol oxidase (PPO) were measured at 15-day intervals during storage at room temperature.The effects of chitosan treatment on quality and enzyme activity of chieh-qua during storage at room temperature were studied,in order to provide reference for the storage at room temperture of chieh-qua.The results showed that the quality of chieh-qua could be delayed by different concentration of chitosan.Among them,1.0% chitosan could significantly reduce the weight loss rate,inhibit the decrease of vitamin C,soluble solids,soluble sugar and soluble protein,and significantly reduce the content of MDA and PPO activity,improve the activity of POD and CAT.In summary,chitosan treatment could maintain the quality of chieh-qua during room temperature storage and prolong its storage time.The best treatment effect was 1.0% chitosan.
