Abstract:
Taking ‘Red Globe’ grape as the test material,the method of soaking in chitosan complex selenium solution (1.0% chitosan and 25 mg?L-1 sodium selenite) were adopted.The effects of chitosan combined with selenium on the storage quality and texture of ‘Red Globe’ grape were studied,in order to provide reference for a new method of grape preservation.The results showed that chitosan combined with selenium treatment reduced the weight loss rate,decay rate and respiratory intensity of grapes,maintained the content of soluble solids,titratable acids and reduced sugars in grapes,and maintained higher hardness,elasticity,chewiness and adhesion of grapes.Therefore,chitosan combined with selenium could effectively maintain the storage quality and texture of ‘Red Globe’ grape.
