Abstract:
Taking the wet modified dietary fiber from Hemsleya chinensis as the research object,through four drying methods of hot air drying,microwave drying,vacuum freeze drying and spray drying,the effects of different drying methods on the color,morphology and physical and chemical properties of samples were investigated,in order to provide reference for the drying and subsequent processing of snow gall tubers.The results showed that dietary fiber treated with four different drying methods exhibited different color morphology and physicochemical properties.The H.chinensis diet fiber,after vacuum freeze-drying treatment,had a white color and was loose and porous.The vacuum freeze-dried samples performed significantly better for moisture uptake,holding force,and oil holding force than those from the other three drying modes,which were as follows,60.1% moisture absorption,3.31 g?g-1 water-holding capacity,and 4.51 g?g-1 oil-holding capacity.Hot air drying had the greatest swelling capacity of 1.36 mL?g-1.Vacuum freeze-drying had a superior cation exchange capacity and adsorption capacity for cholesterol compared to the other three drying methods.Therefore,vacuum freeze-drying could enhance the color and morphology of dietary fiber as well as provide higher moisture absorption,higher water holding capacities,and higher oil absorption capacities.Thus,vacuum freeze-drying was a preferred method of obtaining high-quality H.chinensis dietary fiber.
