Abstract:
Taking Lyuliang jujube as the raw material,the soluble polysaccharides was extracted by complex enzyme extraction technique.On the basis of single factor experiment,the optimal process conditions for polysaccharide extraction of Lyuliang jujube were optimized by orthogonal test.The effect of antioxidant activity was evaluated by scavenging rate of ·OH,DPPH free radical,and antioxidant effect on rap oil,in order to provide reference for the development and utilization of jujube functional products.The results showed that,when the papain concentration was 0.2%,pectase concentration was 1.0%,the temperature was 45 ℃,and the time was 90 minutes,the extraction was the best.With the polysaccharides concentration rasing,the scavenging rate of ·OH,DPPH free radical,and antioxidant effect on rap oil were increased.It confirmed that jujube polysaccharides had a good antioxidant activity.This study was optimized polysaccharides extraction process.Antioxidant activity of polysaccharides was confirmed.
