Abstract:
It was difficult for fresh storage in normal temperature during logistics and retail.Taking broccoli as test material,100% O2 active modified atmosphere packaging (100%O2+AMAP) and natural air with modified atmosphere packaging (Air+MAP) were designed,and the unpacked natural atmosphere was used as a control (CK).For 100%O2+AMAP and Air+MAP treatments,broccoli heads were treated with 2 days and 4 days and then transferred to air.During storage at 20 ℃,the O2 and CO2 contents in container and the storage quality both in the period of AMAP and residual effect were periodically measured.The influences of high oxygen active modified atmosphere packaging and its residual effect of broccoli storage was carried out.The results showed that yellowing occurred on 2 days of control CK.Broccoli heads treated 2 days under Air+MAP had 1 day residual effect,and the shelf life reached 3 days;however,severe damage of broccoli heads treated 4 days with Air+MAP.100% O2+AMAP treatment had 2 days residual effect after treated for 2 days and 4 days,which shelf life reached to 4 days and 6 days,respectively.At the same time,the residual effect of 100% O2+AMAP treated 4 days was better than 2 days,which effectively inhibited the yellowing of broccoli,maintained its coloration and nutrients.In this study,the AMAP and its residual effect perfectly connected with logistics transportation and retail links,which could provide a theoretical reference for the preservation of broccoli during non-cold chain logistics.
