Abstract:
Cowpea was used as test materials,and were treated with LTC+MAP to determine the effect of LTC+MAP on chilling injury of cowpea by low temperature conditioning (LTC) and modified atmosphere (MAP).The results indicated that LTC+MAP kept higher sensory score,inhibited increase of MDA content and weight loss,and enhanced TSS content,vitamin C content,POD activity.LTC+MAP exerted the best preservation.
