Abstract:
Taking‘Cuiyun No.1’kidney bean as material,using two factors completely random experiment design,the effect of high voltage electrostatic field and processing time on physiological activity of kidney seed were studied.The results showed that,under the 300 kV/m,90 min treatment,the free proline content was the highest with (16.30±1.40) μg/g FW,significantly higher than most of the processing and control.Under 100 kV/m,30 min treatment,the peroxidase activity was the highest with (13.02±0.78) μg·g-1·min-1,very significantly higher than other treatment and control;under 200 kV/m,60 min processing,the superoxide dismutase SOD activity was the highest,with (468.36±26.55)U/g FW,significantly higher than most of the processing and control;within each electrostatic field as the growth time extended,the measurement indexes presented first rising then decline trend,under 30 min,100 kV/m treatment,chlorophyll a,and chlorophyll b,total chlorophyll content and POD activity were superior to other processing;The experiment showed that suitable high voltage electrostatic field treatment was favour of improving kidney beans resistance.
