Abstract:
Taking Matthiola incana (L.) R.Br. petals as raw materials,by using solvent extraction method,by single factor experiment,and the orthogonal experiment,Matthiola incana(L.) R.Br. pigment extraction technology and pigment stability were optimized and studied.The results showed that the opitimum Matthiola incana(L.) R.Br. petals pigment extraction technology were:with acetone extraction as agents,solid-liquid ratio was 1∶40,extraction time was 3.0 h,55℃ temperature.The pigments were not high temperature resistant,the oxidation resistance of the gender was weak,ultraviolet light had hypochromic effect obviously,under neutral partial weak acid could remain stable,glucose,citric acid in the protection.Fe3+ had great influence on pigment.
