Abstract:
Taking Pleurotus ostreatus as test material,2.47 mg?L-1 ozone fumigation combined with low-temperature spontaneous modified atmosphere packaging (2.47 mg?L-1 O3+L-MAP) Pleurotus ostreatus was used to determine the sensory quality and physiological indicators of Pleurotus ostreatus during storage.In order to develop a suitable composite fresh-keeping treatment method.The results showed that 2.47 mg?L-1 O3 + L-MAP treatment can effectively maintain the storage quality and color of Pleurotus ostreatus,inhibit the increase of brightness L value and weight loss rate,delay the accumulation of MDA content,effectively maintain the integrity of the cell membrane,and slow down consumption of total phenol,inhibition of PPO enzyme activity,thereby inhibiting browning of Pleurotus ostreatus,and enhanced activity of antioxidant enzyme CAT,reducing the damage of cell tissues by excessive hydrogen peroxide.Therefore,2.47 mg?L-1 ozone combined with low temperature spontaneous modified atmosphere packaging treatment can effectively maintain the storage quality of Pleurotus ostreatus and prolong the storage period.
