Abstract:
The soluble polysaccharide was extracted by water extraction method and the extraction process parameters of L9(34) were conducted on the basis of single factor experiment.The antioxidant activity of polysaccharides was studied by measuring the total antioxidant capacity and reducing power of polysaccharides and their ability to remove 1,1-diphenyl 2-trinitrophenylhydrazine (DPPH) radical,hydroxyl radical and superoxide anion radical.The results showed that when the ratio of solid to liquid,extraction times,extraction time and extraction temperature were 1∶35 g·mL-1,once,1.5 hours and 90 ℃ respectively,the extraction rate of polysaccharide was the highest,which was 7.34%.Its total antioxidant activity unit was 88.96 U·mL-1,and it had a certain reduction force.The scavenging rates of DPPH,hydroxyl and superoxide anion radical were 36.8%,65.1% and 36.8%,respectively.The optimum process parameters for polysaccharide extraction were the ratio of solid to liquid,the numbers of extraction,extraction time and extraction temperature of 1∶35 g· ml-1,once,1.5 hours and 90 ℃,respectively.Under this parameter,the polysaccharide content extracted from clover was the highest and had certain antioxidant effect.
