Abstract:
Taking Cangzhou jujube as the test material, the optimum extraction conditions and stability of the red pigment of the jujube were studied by water bath extraction. In order to determine the effect of the material-liquid ratio, NaOH concentration, extraction time and extraction temperature on the extraction of red pigment, as well as the effects of temperature, light, metal ions and sweeteners, etc. on the stability of the red pigment. The results showed that the optimal extraction conditions for pigment of jujube were material-liquid ratio 1∶10 g?mL-1, sodium hydroxide concentration 4%, extraction time 4 hours, extraction temperature 80 ℃. The jujube red pigment was less stable in direct light, strong hydrogen peroxide oxidant and Fe3+ rich environment.
