Abstract:
In order to explore the effects of different drying methods on the quality of raspberries,the contents of total polyphenols,flavonoids and antioxidant activity of different drying methods were explored.Ultrasonic-assisted extraction of total polyphenols,flavonoids from the four different drying methods including nature sun drying,hot-air drying,infrared radiation drying and vacuum-freeze drying was evaluated.In addition,the DPPH? and ABTS+? scavenging capacity of the dried Rubus corchorifolius L. were also determined.The results showed that the contents of total polyphenols and flavonoids in vacuum freeze drying were the highest,which was (2.47±0.29)mg?g-1 and (2.06±0.61)mg?g-1 in vacuum freeze drying,respectively.The dry methods could reduce the DPPH? and ABTS+? scavenging capacity.DPPH? and ABTS+? half inhibitory concentration IC50 of the vacuum freeze drying Rubus corchorifolius L. were (4.53±0.04)mg?mL-1 and (5.17±0.12)mg?mL-1,respectively.Based on these results,vacuum freeze drying maybe the most suitable method for preserving polyphenols,flavonoids and antioxidant activity in Rubus corchorifolius L..
