Abstract:
Pepper is one of the most important vegetable crops in the world,which has high nutritional and economic value.Among the main vegetable crops,the content of vitamin C in pepper fruit is the highest.Vitamin C has high oxidative activity,high functional efficacy on human health,and can prevent a variety of chronic diseases.In addition,because of the natural vitamin C content in pepper compared with synthetic vitamin,it has higher safety and edibility.Therefore,the study of vitamin C content in peppers fruit has great research value.In this study,the research progress of vitamin C in pepper fruits was reviewed in order to provide theoretical basis for the study of related genes of vitamin C traits in pepper.
