- Abstract:
- Taking ‘Fuji’ apples inoculated with Penicillium expansum as materials,the effects of different temperature and humidity during storage on the level of toxin produced and related physiological control was studied by measuring the changes of patulin content,the growth of Penicillium spp.,and the related physiological indexes in different temperature and humidity storage conditions.The results showed that under the temperature of 2,15 and 25 °C,the rotten degree and the accumulation of toxin increased with the rise of temperature;in the humidity of 65%-70%,75%-80% and 90%-95%,the decay degree and the accumulation of toxin increased with the augment of humidity.In addition,low temperature and humidity could effectively reduce the respiratory intensity of inoculated apples,the content of soluble solids and the energy and substrate needed for patulin synthesis,which thus inhibited the synthesis of patulin.There was a significant positive correlation between the accumulation of patulin and the diameter of decay and ethylene release during storage.The rot of apple could be most severe and patulin was the most abundant at a temperature of 25 °C and a humidity of 90%-95%.It showed that the storage conditions and diameter of the rot part of inoculated apple and ethylene release were closely related to the accumulation of patulin.
