Abstract:: Taking nut of Laxix olgensis Henry as test materials,the extraction process of pigment from pine nut shell was discussed using solvent extraction.The following factors influence the extraction effects of pigment from pine nut shell，such as solvent concentration，extraction temperature and extraction time were studied.The results showed that，the optimum condition for extraction process of solvent extraction were ethanol concentration 50%，extraction time 120 minutes，extraction temperature 70℃.
