Abstract:
TakingCordycepsmilitarisextractsandfreshmilkasmainrawmaterialsandwiththeadditionofdifferentminoringredients,onthebasisofthesinglefactorexperiment,orthogonaltestwasadoptedtodecideabestformulaofafermentedmilkbeveragewithCordycepsmilitaris.TheresultsshowedthattheoptimalformulaofthebeverageweretheCordycepsmilitarisextracts35%plusfermentedmilk52.5%,compositestabilizer0.5%,sucrose11%,andcitricacid0.2%,undertheseconditions,theproductobtainedgoodstabilityandgoodtaste.
