Abstract:
Taking Dioscorea alata L.from Zhejiang,Yunnan and Hunan different producing areas as materials,the anthocyanins in Dioscorea alata L.were extracted by using acidic ethanol and determined by the pH-differential spectrophotometry.The results showed that the anthocyanin content from above producing areas were about 25.7,21.0,16.7 mg/100g and anthocyanins content of Dioscorea alata from Zhejiang was superior to other two areas,which provided the scientific basis for resource development and use of Dioscorea alata L.
