Abstract:
Takingwinterjujubeasmaterial,theeffectsofdifferentconcentrationsofchitosantreatmentatroomtemperature(20±1)℃,relativehumidity60%~80%onthestoragequalityandfresh-keepingeffectwerestudied.TheresultsshowedthatcomparedwithCKgroup,thechangeofchitosantreatmentcouldinhibitthechangeoffruitrotrateandweightlossrate(P<0.01),delaydecreaseoffruitfirmnessandVCcontent(P<0.05),delaychangeofrespirationrate(P<0.05).Amongthem,thestoragequalityofwinterjujubewasoptimalwith2.0g/100mLchitosantreatment,25daysofstorage,rottenfruitratewasonly43.3%,weightlossrateandrespirationratewere7.36%and98.3mg(CO2)?g-1?h-1,fruitfirmnessandVCcontentwere9.23kg/cm2 and2.42mg/g.
